This ending were Mina leaves Drcaula and hugs Jonathon just feels so much better and more faithful to the book. Throughout the film, Dracula was nothing but a total piece of shit, a murderer, warlord, rapist etc who Mina only fell in love with due to the prophecy stuff and his powers of seduction.

Jonathon was nothing but loyal to her in the whole film, even when she turned. He risked his life and mental state going back to Transylvania to free her. The cross healing in this ending is a symbol of the prophecy or curse being rectified and Mina being free and choosing her love in the present over her "love" in the past.

Coppola bragged a lot about how his version of the story is the most faithful to the book, this alternate ending would be much more faithful to book and the original characters of Mina, Jonathon and Dracula.
