What are some of the best movie "B plots"?

I love Kirsten Dunst's character arc in "Eternal Sunshine of the Spotless Mind". In fact, after watching that movie a few times, I've developed a deeper appreciation for the "C plot"(?) of Carrie and Rob (David Cross)'s relationship. In general, I think subplots and secondary characters sometimes emerge more clearly upon rewatching the movie.

What are some other "B plots" that drew you in?
